Our restaurant Rizoom started as a pop-up ramen-bar called Shibui in January 2019 with the intention of closing after four months. Fortunately, we were able to extend our stay at Nieuwewandeling 62 so we decided to continue with a changed concept, changing Shibui from a ramen-bar to a izakaya style, japenese influenced restaurant with a fine dining approach.
An izakaya is a type of Japanese gastrobar in which a variety of dishes are served to accompany the (afterwork) drinks. The menu changes organically according to the seasons and there’s also an option to choose a fixed table menu that fills your whole evening. For lunch we serve a short lunch menu with small plates to share and an individual main course followed by dessert.
After our pop-up got extended again after summer the idea of actually staying permanently at this location became more and more lively and serious. At this moment, after a year of uncertainty, we can proudly announce that our restaurant and team will stay at this location. Shibui will go on as it is until the end 2019 to come back in January 2020 as restaurant Rizoom to break with the pop-up structure.
